No, Latest News is not dividable. The More News box can be controlled the way you described, you can choose which categories you want to display, number of articles and number of columns.

Ok, now I’m not quite sure I understood you, by “latest articles”, do you mean “latest news” section or “more news” section of site.
The categories are not displayed in “latest news” section of the site, only articles.
You can control “more news” section from your administration >> Control Panel >> Home page >> Modules (boxes). From there you can choose which categories are displayed, number of columns and number of articles per category for “more news” section of the site.

As for “latest news” section, you can reorder your articles the way you want in administration >> Control Panel >> Article management >> Manage article options.
Just drag and drop them the way you want to show up on your home page.
For example, when you add a new article it automatically goes first in line of Latest News section, if you don’t want that article to be displayed you can move it to the bottom of the row in your administration and it wont be displayed on your home page.
